BANANA CAKE

An easy preparation with banana also tasty one

Ingredients

Banana…..big..3 small 4

Butter…50gms

Egg…1

Sugar…1/2 cup

Baking powder….1 TSP
Baking soda….1/2tsp

Salt….1/4 TSP
Vanilla essence…2 TSP

Maida…1 cup

Nuts optional

Method

1.Mash the bananas in a bowl

2.Add melted butter to it.

3.Now add egg.Mix well.

4.Add powdered sugar and mix

5. Now add baking powder, baking soda,vanilla essence,salt and nuts if going to add to the mixture and mix well.

6.Finally add maida.

7.Preheat the oven at 200 degrees.

8. In a greased tray add the mixture It should be only  half of the tray as it will raise after baking.

Now bake the cake for 35 mts.

Insert a stick and if it comes out without any cake mixture then cake is done.

Different models have different baking time. So bake according to it. Also bake cake in desired shape.

Pineapple upside down cake

I was planning to bake this cake for a very long time. My son’s birthday was on 14 th so decided to give him a surprise by baking this cake.Really he was very happy when he saw the cake.

  • Ingredients for the first layer of the 🍰
  • Pineapple slices…..5 to 6 slices(either fresh or tinned)
  • Cherries…….6 to 7 nos
  • Brown sugar…25 gms
  • Butter…….25 gms

Ingredients for the cake batter

  • Maida……200 gms
  • Butter…….200gms.
  • Sugar………200gms
  • Eggs…………3 nos
  • Vanilla essence..1/2 TSP to 1
  • Baking powder….1 tsp

Method

  1. For the pineapple layer.
  2. In a pan heat butter a little and add brown sugar after few minutes it will get thickened.
  3. Now pour the syrup in a baking tray.
  4. Arrange pineapple slices.
  5. In between arrange cherries.

6.Keep aside.

For cake batter:

  1. Powder sugar.
  2. Cream butter and sugar.
  3. Sieve maida and baking powder thrice.And slowly add to the butter mixture.
  4. Add the egg yolk first and mix well.
  5. Beat the white till it is frothy and slowly add to it.
  6. Add vanilla essence to it.
  7. Pour the cake mix over the pineapple pieces.
  8. Spread evenly
  9. Preheat oven at 190 degree.
  10. Now bake cake for 26mts at 190.
  11. Check whether the cake is done by pricking with a stick.
  12. When done flip it on a tray.
  13. Pineapple layer will be on top.

Optional

1.Can use any other essence.

2.Can use the syrup if using canned pineapple .

When we taste the taste of pineapple in between the cake layer is very different.

NANKHATAI

When decided to visit my daughter,thought of making nankatai for my grandson.Though it was my first attempt it came out well.As it is home made it can be given for kids.Also easy to prepare.

Ingredients

  • Maida…240gms
  • Sugar….130gms
  • Dalda….150gms
  • Sodabicarb..a pinch
  • Cardomom for flavouring.

METHOD

  1. Cream dalda and sugartill light and fluffy.
  2. Add flour and flavouring and mix to a smooth dough.
  3. Make into balls and place on a baking tray.
  4. Bake at 325 degree F for 25 mts.
  5. The colour after baking should be white.

VANILA SPONGE CAKE

After many years thought of baking a sponge 🍰 in my microwave oven.My daughter and grandson came to stay with us for few days.I baked a cake on this occasion so that can give the little one home made cake.This very easy and is a basic one.It came out well and my family enjoyed it.

Ingredients:

  • Maida…200gms.
  • Grounded sugar…200gms
  • Eggs…..3
  • Vanilla Essence…1/2 to 1 tsp.
  • Baking powder…..1tsp
  • Dried fruits finely chopped.
  • Cashews…… Grated 1 tsp

Sieve maida and baking powder three times.

Mix dry fruits with little maida so that it will get mixed evenly.

Method

  1. Cream butter and sugar.
  2. Then add maida and mix well.
  3. Now separate the white and beat it till it becomes a stiff froth.
  4. First add the yolk and then add the white..
  5. Now add the essence and mix all the ingredients very gently.
  6. Put the batter in an greased vessel.
  7. Preheat oven at 190 degrees.
  8. Then bake it for 26 mts.at 190 degrees.

Check before few minutes whether it is done.

Insert a tooth pick or a knife in the middle of the cake after 20 mts.If it is sticky or with batter bake for few minutes.

If the stick comes out clean then cake is done.

After the 🍰 becomes warm run a knife around the cake and loosen the sides.

Invert the cake in a plate and then cut it.
