CAPSICUM RICE

This another easy one pot recipe.

Ingredients

Bay leaf…..1

Cinnamon.. 2pieces

Star anise….1or 2

Mace….few strands

Stone flowers few

Rice……1 to 1/2 cup

Onion…2

Ginger garlic paste

Turmeric powder….1 TBS
Capsicum. 2

Salt as needed

Onion…..1

Tomatoes…2

Capsicum….2

Green chillies……3

Pudina

Grind all these into paste.

Method

1.Soak rice for 15 mts

2.In a cooker add ghee.

3. Now add whole spices,bay leaf,saunf,cloves,cinnamon.

4. Fry a little and now add onion,saute add tomatoes tout fry add capsicum.

5. Now add ginger garlic paste,turmeric powder.

6. Mix well add grinded paste fry a little and add soaked rice.

7. Add two times water.

8. Keep for 2 whistle and serve with raita and papad.

RAWA/SOOJI CUTLET/LEFT OVER UPMA CUTLET

We make cutlets with different stuffings. Today I’m going to share rawa cutlet. We can make fresh stuffing or can make cutlets with left over upma.Very simple but tasty.

Ingredients

Rawa……120 gms
Green chillies…2nos chopped

Garam masala powder….1 tsp

Maida……10 gm

Groundnut powdered….15gms

GratedGinger ….1″piece

Big onion chopped…1

Milk….400 ml

Bread crumbs for coating.

Oil for frying

Method.

1. In a kadai put oil add onion,green chillies,grated ginger and garam masala.

2.Add milk to it.

3. Leave for few mts.

5. Slowly add rawa to it.Add required salt and powdered groundnut.Stir it constantly till the milk is absorbed.

6.When the mixture gets cooled shape it as desired.

7.Add water to maida to make it as a slury.

8. Now dip the shaped cutlets in it .

9. Coat it with bread crumbs.

10.Refrigerate for 10 to 15 mts

11.Finally fry cutlets .Either shallow or deep fry. I have done shallow fry.

12. Drain excess oil .

12. Serve with sauce.

Few points.

1. I have given a very simple version.

2. You can add veggies of your choice

3. Instead of groundnuts you can add cashews.

4.If making in bulk quantities can prepare cutlets and refrigerate it before frying.

5. When needed can fry.

TOMATO THOKU/THAKALI THOKU

An easy side dish for idli, dosa and chappathi.

Ingredients:

Tomato……..4 to 6

Onion……..2

Curry leaves few

Garlic few pods

Seasoning

Oil

Turmeric powder….1 tsp

Chilli powder……..1 to 2tsp accdg to taste

1.In a kadai put oil.

2.Add seasonings then Curry leaves,onion and garlic and fry a little.

3.Now add chopped tomatoes to it.

4.Now add turmeric powder,chilly powder and required salt.

Keep stirring in between till tomato becomes mushy and it leaves the sides of the pan.

HEALTHY PEANUT SALAD

Ingredients

Peanuts roasted……1 cup

Onion chopped……3/4 to 1 cup

Chilli…..1 No

Lemon juice….1/2 to 1 tsp

Salt…..1 tsp.

Mix all ingredients in a bowl finally add lemon juice to it.

Healthy salad is ready.

CUCUMBER SALAD KOREAN STYLE

There are many salads. Today this salad is Korean style with simple ingredients. I liked the taste and it is a different combination of ingredients. This is very healthy recipe.

  • English Cucumber……1
  • Onion……1
  • Garlic …..few pods
  • Soya sauce….2 TSP
  • Red chilli flakes….1 TSP
  • Gingely oil….2 TSP
  • Sesame seeds..2 TSP
  • Sugar……1 tsp (optional)
  • Salt….as required

Preparation

  • Cut English cucumber diagonally first and then chop it.
  • Onion sliced finely
  • Garlic finely chopped.

Method

Take a bowl and mix the ingredients well till sugar gets dissolved.

Can serve with rice or roti.

BREAD SANDWICH

There are different types of filling for bread sandwich.

Ingredients

Bread slices…….4

Onion……..1

Tomato……1

Green chilli…..1

Red chilli powder…..1/2 tsp

Salt as required

Coriander leaves.

Except bread mix all the other ingredients and keep aside.

Method

  • If you are using bread toaster.Clean it with kitchen towel.
  • Then apply ghee or melted butter.
  • Keep one slice of bread first.
  • Then spread the prepared mixture on the bread.
  • Then cover it with another slice.
  • Now close the toaster.
  • Switch it on.
  • Serve with sauce .

Easy kozhukattai

An easy snack or breakfast .This can be made very easily if you have rice flour at home.

  • Ingredients:
  • Rice flour……..1 cup
  • Salt as needed
  • Oil
  • Red chillies….few
  • Curry leaves few.
  • Urad dhal…..1/2 tsp
  • Mustard seeds..1/4 tsp
  • Coconut grated….1/4 cup

Method

  • Take a bowl and put rice flour into it.
  • In a kadai add little oil when it gets heated add mustard seeds when it splutters add urad dhal then add broken red chillies and then curry leaves when it gets fried add to the rice flour and keep aside.
  • Add coconut scrapings.
  • Now boil two cups of water with salt and 1 tsp oil.
  • Add it to flour.
  • Now mix well with a laddle without any lumps.
  • Make balls out of it.
  • Now keep it in a steamer and cook till it gets done.

If this is not for neivedyam you can add chopped onions and fry with red chillies and then add to the flour.This has a different taste.If for breakfast can have with coconut chutney.

RAWA PAYASAM

Easy payasam recipe.can make this within few minutes.

Rawa…….1/2 cup

  • Cashews few
  • Raisins few
  • Water…1 1/2 cup
  • Milk….1 litre
  • Sugar.. 2 cups
  • Ghee…2 tbs
  • Yellow food colour

METHOD

  • In a tawa add ghee and fry rawa.
  • Add water, milk and sugar and boil.
  • When it gets cooked add sugar,cardomom powder,color and nuts.
  • Serve hot or cold.

KARAPOONDI RAITHA

There are different types of raitha. This poondi raitha goes well with both rice varieties as well as poori,roti and chappathi.Very easy to prepare.This is a North Indian raitha. Thisis prepared from crisp fried gram flour balls.Plain boondi is used for sweet like laddu this is salted ones.

Ingredients:

  • Salted boondi…….1/2 cup
  • Curd…..1 cup
  • Salt as required
  • Red chilli powder….1/4 tsp
  • Cumin powder……1/2 tsp
  • Chopped coriander leaves

Method:

  • Keep water on stove and when it is warm switch off the stove.
  • Soak boondi in warm water for 10 to 15 mts.
  • Then press the boondi to squeeze out water but do not mash it.
  • Whisk curd.
  • Add salt
  • Add cumin seeds powder and red chilli powder to curd.
  • Finally add whisked curd and chopped coriander leaves.
  • Option:Can add chat masala too.
