TIFFIN SAMBAR without DHAL with MINI IDLI

There are many varieties of sambar today I’m going to share a sambar without dhal.A very tasty sambar.

Tomatoes…..6Nos

Garlic…….4pods

Green chillies…4slit

Small onion…10nos

Oil…1tbs

Method

1.In a pressure or cooker pour oil.Add onion to it

2.Add green chillies,tomatoes and garlic to it.

3.Fry a little.

4.Add 1cup water

5. Keep it for two whistles.

6.Keep the excess water aside.

7.Grind the mixture to a paste.

Now for the gravy

Ingredients

Fenugreek ….1/8tsp

Cumin seeds…..1/4tsp

Mustard and urad dhal…1tsp

Red chillies….1or 2

Turmeric powder…1/2tsp

Curry Leaves

Small onion……15chopped

Hing
Besan flour…..2or 3tbs add water to make it a paste

Sambar powder….2tbs

Salt

Oil

1.Put oil in a pan add fenugreek,cumin seeds, mustard and urad dhal.

2.Now add chopped onions,curry leaves

3.Add the water which is kept aside.

4.Boil for few minutes and then add the grinded paste.

5.Then add sambar powder,salt and besan paste allow it to boil

6.Finally add coriander leaves.

Optional can add a piece of jaggery now.

For serving.

In a bowl keep mini idli and then pour sambar over it.Add a dash of ghee to enhance the taste.

BABYCORN CAPSICUM JALFREZI

JALFREZI is not only simple but tasty recipe too. It is a kind of dish with a few spice powder sauteed with onions and cooked in tomato puree.

Can use paneer or different color bell pepper but I have used green bell pepper.

Ingredients

Baby corn…..12 to 15 nos

Capsicum….1 no

Dry chillies……2

Garlic few pods

Ginger1 ” piece grated

Tomato puree…..1 cup

Apple cider vinegar or white vinegar 1/2 tsp

Sugar……1/2 tsp

Salt as needed

Oil

Garam masala or vegetable masala powder….1/2 tsp

Cinnamon…..a small piece

Cloves….3

Method

In a kadai put oil.

Now put cinnamon,cloves then addgarlic pieces and grated ginger then onion add little salt and saute.

Add capsicum and red chillies.when sauteed add babycorns cut into 4 pieces or 8.

Add all the spice powders and fry a little.

Now add tomatoes puree,vinegar and sugar.

Check for salt

Don’t over cook the baby corn .It hould be crunchy.

Finally add chopped Coriander leaves.

This will thicken quickly.If you want to have runny gravy add little water.

PANEER BHURJI

Paneer is fresh cheese common in India. Paneer bhurji is a delicious North Indian side dish.

Bhurji means scrambled so in this dish paneer is scrambled or crumbled.It is a quick recipe and can have withbread,roti or paratha.

Ingredients

Paneer….. 200 to 250 gms

Oil….3 tbs

Cumin seeds….1/2 tsp

Onion finely chopped….1/2 cup

Green chilles…..2 nos chopped

Tomatoes….1 cup

Turmeric powder….1/2 tsp

Chilli powder…. ..1/2 tsp

Coriander powder…. 1/2 tsp

Garm masala or vegetable masala….1/2tsp

Salt as required

Coriander leaves chopped …..2 tbs

Method

In a kadai put oil and then add cumin seeds then chopped onion

Now add green chillies and tomatoes to it.

Now add turmeric powder,chilli powder, vegetable masala and salt to it.And fry it.

Allow it to cook for few minutes only. Otherwise it will become hard.

When tomatoes turns mushy and the spice powders blend well add crumbled paneer to it.

Finally add chopped Coriander leaves

Serve with paratha or roti or rice of your choice.

POONDU RASAM/GARLIC RASAM

Garlic is closely related to onion family.Each segment of a garlic ball is called a clove.There are about 15 to 20 cloves.It is popular ingredient in cooking cos of it’s smell and taste.We have health benefits once when it chopped or crushed.It contains sulphur componds.It is very nutritious and has few calories.It is rich in Vit.C,Vit.B6 and Manganese.Various other nutrients are also present.Garlic supplement help prevent and reduce the severity of common illness like flu and common cold.High doses of garlic appear to improve blood pressure for those with high blood pressure. It also improves cholesterol levels.It is delicious and can add to savoury dishes,soups, sauces dressings and more.

Ingredients:

  • Pepper…..1 tsp
  • Cumin seeds…1 tsp
  • Garlic cloves…3 or 4
  • Dry chilles….2

Have to powder these ingredientsGarlic cloves to be crushed.

For rasam

  • Red chillies…. 2
  • Tomato…1
  • Turneric powder…1/4 tsp
  • Hing a pinch.
  • Mustard seeds…1/4 tsp
  • Urad dhal split….1/2 tsp
  • Curry leaves few
  • Oil…..1 tbs
  • Tamarind small lime size and extract pulp

Method

  • In a pan add oil and seasonings to it with red chillies.
  • Add crushed garlic to it
  • Fry a little and add tomatoes to it.
  • Now add the rasam powder to it.
  • Add asafoetida and then tamarind extract.
  • When it starts to boil add Coriander leaves and switch it off.
  • Serve with rice.

Suggestion:

I have used red chillies for the powder with seeds but can deseed and use it.

Can filter and have it as soup.

PINEAPPLE RASAM

There are different types of rasam.Today going to share pineapple recipe.

INGREDIENTS:

  • Pineapple slices……2 slices
  • Tomato pieces………2
  • Toor dhal cooked water
  • Rasam powder…1 tsp

For Powder;

  • Peppercorns….1 tsp
  • Cumin seeds….1 tsp
  • Garlic pods…..few pods

Seasoning

  • Oil…2 TBS
  • Mustard seeds…1/4 TSP
  • Urad dhal…..1/2 TSP
  • Red chillies..2
  • Curry leaves few
  • Coriander leaves

PREPARATION

  • Pineapple Slice 1 cut into pieces
  • Pineapple slice to be mashed
  • Tomato 1 to be chopped into pieces
  • Tomato 1 to made into puree
  • Powder peppercorns,cumin seeds and garlic pods

METHOD

  1. In a kadai add 1 Tbs oil.
  2. Add mustard seeds when it splutters add urad dhal when it turns brown add redchillies,curry leaves and 1/4 of the powder.
  3. Add tomato pieces and pineapple pieced and fry a little.
  4. Meanwhile in a bowl add dhal water,tomato puree, pineapple paste and balance powder,salt and mix well.
  5. Add the mix to the kadai and allow it to boil.
  6. When raw smell goes switch off the stove.
  7. Add coriander leaves.

TOMATO KULAMBU/EASY TOMATO CURRY

Bored with regular sambar, rasam pulikulambu wanted to try a different one.As a result tried this receipe with tomatoes.

Ingredients:

  • Tomatoes…….1/2 kg
  • Onion ………..6
  • Green chillies….2
  • Curry leaves a few
  • Turmeric powder…1/4 tsp
  • Ginger small piece grated
  • Garlic….few pods
  • Coconut scrapings… 1/2 cup
  • Oil…..2 tbs

For grinding masala:

  • Red chillies…….6
  • Jeeragam……..1 tsp
  • Coconut scrapings…..2 tbs

Extract milk from Coconut scrapings .

Make tomato puree.

Method:

  1. Put oil in a kadai.when heated add seasonings.
  2. Add chopped green chillies,curry leaves ,grated ginger,onion and fry a little.
  3. Then add tomato puree.
  4. To it add turmeric powder,masala salt and fry a little.Allow it cook or add very little water to cook.
  5. Finally add coconut milk.
  6. When it gets cooked remove from fire.
  7. Add chopped coriander leaves.

If you like masala taste can add 1 piece cinnamon,4 cloves,2 staranise to the seasonings.

Also if you want more gravy can add poppyseed while grinding masala.
