MOMOS

Momos is a type of steamed food filled dumpling. There are typically two types of momos steamed and fried.Momos is usually served with a dipping sauce Normally made with a tomato as the base ingredient.Pan fried momo is also known as kothey momo.This is inherited from the traditional Nepali cuisine.It is plain flour based dumplings steamed with carrot,cabbage stuffing. It has become a popular street food in India and is typically served with a red coloured and watery chutney.

It’s time consuming.

For outer covering

Maida…..1 cup

Salt

Oil…..1 TBS

Mix everything into a dough with water and keep it aside.

For filling:

Carrots grated 1/2 cup

cabbage finely chopped…1.5 cup

Green chillies……1

Onion …..1 finely chopped

Garlic chopped into small pieces. 4 to 5 nos.

Ginger small piece grated

Pepper powder……1/2 tsp

Capsicum……..chopped3 tbs

Soya sauce……1.5 tsp

Salt

In a kadai put little oil now add garlic, onions, after sauting add cabbage,carrot then add salt and pepper powder.Finally add soya sauce mix well.Let it cool.

Make balls out of dough

Roll out each dough ball into a thin circle of about 2 to 3″.

Edges have to be thin

Place 1 to 2 TSP vegetable stuffing in the centre and start pleating from one side.

Or if you are going to make it semi circle make it and press sides with water.

Now place it in a steamer grease the plate with oil and arrange them.

If u don’t have momos steamer idli pan or cooker.

Cook till it becomes transparent not too long.

The other variety is to fry the prepared momos in oil.

Serve hot with momos chutney

VEGETABLE SALNA

Salna as it is pronounced is a side dish for parotta, chappathi,roti and even dosa.Parota is served with spicy and tangy Salna.

Masala to grind:

  • Cinnamon…2 ” piece 2
  • Cloves… 4
  • Saunf….2 TSP
  • Cardomom….3 nos
  • Jeera……1 TSP
  • Onion….2
  • Tomato…2
  • Ginger…1 ” a piece
  • Garlic few pods.
  • Coconut scrapings…1/3 cup
  • Oil…..2 tsp

  • Redchillies powder….1 TSP
  • Coriander powder….2 TSP
  • Fry all the ingredients first the dry spice then onion,tomato,garlic,ginger then add chilly powder and coriander powder.
  • Finally add coconut scrapings
  • When cool grind it into a fine paste.

Ingredients for curry

  • Oil..2 TBS
  • Bay leaves..2
  • Cinnamon….. 2″1 piece
  • Saunf……1 TSP
  • Green chillies…3
  • Tomato….1
  • Onion….1
  • Carrot,peas,potato……2 cup
  • Salt as required
  • Coriander leaves

In a pressure add 2 TBS add bay leaf, cinnamon and saunf.

Now add chopped onion, tomato and chillies

Now add chopped vegetables to it

Now add the grinded paste and salt

Add required amount of water cover and keep for 2 whistles.

Finally add chopped coriander leaves.

Healthy Gothumba Dosai/ Instant wheat flour dosai

Wheat flour dosai also known as gothumba dosai is a common South Indian dosai. It is very easy to prepare.I have added soy flour, cabbage and kasuri methi to increase its nutritive value. Easy to prepare. serve hot or else it may become soggy.
Ingredients:

  • Wheat flour : 1 cup
  • Soy Flour: 1/4 cup
  • Green chillies:2 or 3 according to taste
  • Cabbage : Finely chopped 3 tbs.
  • Onion : 1 finely chopped
  • Coriander leaves:1 tbs
  • Kasuri methi: 1 tbs (dried fenugreek leaves)
  • curry leaves: finely chopped
  • Asafoetida: a pinch
  • Curd : 2 tbs (optional)
  • Oil
  • Mustard and dhal :1tbs
  • Salt : to taste

Method

Mix wheat flour, soy flour and salt first.

Now add water to this mixture make as dosa batter without any lumps.

Heat oil and add the mustard and dhal when it splutters add green chillies,onion and curry leaves.when onion becomes transparent remove from fire add to batter.

Now add chopped cabbage , asafoetida,methi and chopped coriander leaves also.

Heat dosa tawa.Pour batter in a circular motion and smear some oil around it.

Now flip the dosa and cook for few seconds.

when done remove it.

If you want thick dosa add little water or if you want thin dosai add more water.

Serve hot with chutney.All my family members like this dosai very much you too try and let me know.

Can prepare this dosai even without adding soy flour.
