POTATO CURRY

Many dishes are prepared with potato This recipe is very easy to prepare.Can be had with rice also can be served with appam or chappathi too.

Ingredients

Potatoes …..2

Onion……..1/2

Garlic cloves…..4

Turmeric powder…1/2 TSP
Curry leaves….few

Coriander powder.. 3/4 TSP
Garam masala…..1/2 TSP
Chilli powder….accdgly to taste 1/2 to 1 TSP

The first step in a pressure pan add all the above ingredients with little water and keep it for 2 whistles.

Ingredients for gravy

Coconut oil….2 TBS
Mustard seeds….1/2 TSP
Curry leaves a few

Turmeric powder…1/2 TSP
Chilli powder….1 TSP
Coriander powder…1 to 11/2 TSP
Kashmiri chilli powder…1/2 TSP
Garam masala…..1 TSP

Method

In a pan heat coconut oil.

Then add all the powder one by one and fry a little. When the aroma comes add the cooked potatoes and salt.Mix well and cook for one-time.

An mash a few pieces of potato es and then add it to the curry.

Can garnish with coriander leaves.

Servethis with rice or with appam or roti.

LADIES FINGER CURRY/ OKRA COCONUT MILK CURRY.

There are different recipes with ladies finger. This curry is prepared with coconut milk.

Ingredients:

  • Onion…….2 nos
  • Tomato….2 nos
  • Ladies finger…250 gms
  • Oil …….3 TBS
  • Coconut…1/2
  • Ginger…..a small piece
  • Turmeric powder…1/2 TSP
  • Coriander powder…1 TBS
  • Chilli powder…3/4 TSP
  • Curry leaves
  • Coriander leaves.
  • Mustard seeds….1/4 TSP
  • Urad dhal……1/2 TSP
  • Oil
  • Green chillies ..2
  • Ginger garlic paste ….1/2 TSP

Extract milk from coconut twice.

Keep them separate.

Method

  1. Put oil in a kadai.when mustard seeds splutters add urad dhal.
  2. Now add curry leaves,onion,green chillies,ginger garlic paste and fry a little then add tomatoes when half done add ladies finger.
  3. Allow it to cook after adding turmeric powder,chilli powder, coriander powder and salt.
  4. Add second extract of coconut milk.when it gets cooked add first extract milk.Dont allow it to boil
  5. When done remove from fire after adding chopped coriander leaves. Serve with rice.

POTATO CAPSICUM CURRY

Potato capsicum curry is a curry which has a nutty flavour.In this recipe groundnut,poppy seeds and til are roasted and grinded. It has nutty flavour with crunchy capsicum and softly cooked potatoes.

Ingredients

For grinding masala.

Saunf……1 tsp

Poppy seeds…..1 TSP
Til……1 TSP
Groundnut….3 TBS
Onion ……1 finely chopped

Garlic…..few cloves

Ginger…..a small piece

Coconut scrapings…1/4 cup

Oil…2 TBS

In a kadai add oil add til,poppy seeds, ground nut fry a little and then add all the other ingredients.

When cool grind it into a fine paste.

Keep aside.

For gravy.

Ingredients

Onion…….2 finely chopped

Tomato ….2 chopped

Capsicum chopped…1 to 1 1/2 cups

Potatoes…….boiled 2

Oil as required

Salt

Method

Put oil in a kadai add 1/2 tsp saying then chopped onions when it gets sauted add tomatoes.

Sauted tomatoes and when sauted add capsicum when half done add potato and salt add little water till it blends well .

Now added grinded masala.if you want spicy add red chilli powder if needed.

Finally add chopped coriander leaves

Serve as side dish for chappathi or roti

GRATED CARROT RICE

Carrot is a root vegetable is a perfect health food. It improves eye health. Orange carrots get their bright color from betacarotene an antioxidant that your body converts into Vit.A.

They are good source of fiber,Vit.K1, potassium,B6 and antioxidants.

Ingredients

Rice……1cup

Cinnamon…1piece

Cardomom…2

Cloves…..3

Star anise …1

Cook rice with the above whole spices and little salt. Add 1/2 lemon juice.Keep aside.

For Carrot rice

Carrot……4 grated

Ghee……3tbs

Saunf….1/4tsp

Cumin seeds….1/4tsp

Onion……2chopped

Green chillies…2

Garlic cloves …..3or 4 pods

Turmeric a small piece

Garam masala……1/4tsp

I grinded green chilli,ginger and garlic.

For a change have used grated turmeric powder I have used fresh turmeric grated.

In a kadai add ghee .Add saunf ,cumin seeds

Add onion and grated turmeric and add grated carrot.

Add grinded chilli ginger garlic paste.Add garam masala powder if you need more spicy add chilli powder and salt.

When done add cooked rice. See that rice doesn’t get broken.

Lastly add chopped Coriander leaves.

MOMOS

Momos is a type of steamed food filled dumpling. There are typically two types of momos steamed and fried.Momos is usually served with a dipping sauce Normally made with a tomato as the base ingredient.Pan fried momo is also known as kothey momo.This is inherited from the traditional Nepali cuisine.It is plain flour based dumplings steamed with carrot,cabbage stuffing. It has become a popular street food in India and is typically served with a red coloured and watery chutney.

It’s time consuming.

1st making of outer cover

2nd filling to be made

3rd shaping

4 the steaming or frying

For outer covering

Maida…..1 cup

Salt

Oil…..1 TBS

Mix everything into a dough with water and keep it aside.

For filling:

Carrots grated 1/2 cup

cabbage finely chopped…1.5 cup

Green chillies……1

Onion …..1 finely chopped

Garlic chopped into small pieces. 4 to 5 nos.

Ginger small piece grated

Pepper powder……1/2 tsp

Capsicum……..chopped3 tbs

Soya sauce……1.5 tsp

Salt

In a kadai put little oil now add garlic, onions, after sauting add cabbage,carrot then add salt and pepper powder.Finally add soya sauce mix well.Let it cool.

Make balls out of dough

Roll out each dough ball into a thin circle of about 2 to 3″.

Edges have to be thin

Place 1 to 2 TSP vegetable stuffing in the centre and start pleating from one side.

Or if you are going to make it semi circle make it and press sides with water.

Now place it in a steamer grease the plate with oil and arrange them.

If u don’t have momos steamer idli pan or cooker.

Cook till it becomes transparent not too long.

The other variety is to fry the prepared momos in oil.

Serve hot with momos chutney

VEGETABLE SALNA

Salna as it is pronounced is a side dish for parotta, chappathi,roti and even dosa.Parota is served with spicy and tangy Salna.

Masala to grind:

  • Cinnamon…2 ” piece 2
  • Cloves… 4
  • Saunf….2 TSP
  • Cardomom….3 nos
  • Jeera……1 TSP
  • Onion….2
  • Tomato…2
  • Ginger…1 ” a piece
  • Garlic few pods.
  • Coconut scrapings…1/3 cup
  • Oil…..2 tsp

  • Redchillies powder….1 TSP
  • Coriander powder….2 TSP
  • Fry all the ingredients first the dry spice then onion,tomato,garlic,ginger then add chilly powder and coriander powder.
  • Finally add coconut scrapings
  • When cool grind it into a fine paste.

Ingredients for curry

  • Oil..2 TBS
  • Bay leaves..2
  • Cinnamon….. 2″1 piece
  • Saunf……1 TSP
  • Green chillies…3
  • Tomato….1
  • Onion….1
  • Carrot,peas,potato……2 cup
  • Salt as required
  • Coriander leaves

In a pressure add 2 TBS add bay leaf, cinnamon and saunf.

Now add chopped onion, tomato and chillies

Now add chopped vegetables to it

Now add the grinded paste and salt

Add required amount of water cover and keep for 2 whistles.

Finally add chopped coriander leaves.

Healthy Gothumba Dosai/ Instant wheat flour dosai

Wheat flour dosai also known as gothumba dosai is a common South Indian dosai. It is very easy to prepare.I have added soy flour, cabbage and kasuri methi to increase its nutritive value. Easy to prepare. serve hot or else it may become soggy.
Ingredients:

  • Wheat flour : 1 cup
  • Soy Flour: 1/4 cup
  • Green chillies:2 or 3 according to taste
  • Cabbage : Finely chopped 3 tbs.
  • Onion : 1 finely chopped
  • Coriander leaves:1 tbs
  • Kasuri methi: 1 tbs (dried fenugreek leaves)
  • curry leaves: finely chopped
  • Asafoetida: a pinch
  • Curd : 2 tbs (optional)
  • Oil
  • Mustard and dhal :1tbs
  • Salt : to taste

Method

Mix wheat flour, soy flour and salt first.

Now add water to this mixture make as dosa batter without any lumps.

Heat oil and add the mustard and dhal when it splutters add green chillies,onion and curry leaves.when onion becomes transparent remove from fire add to batter.

Now add chopped cabbage , asafoetida,methi and chopped coriander leaves also.

Heat dosa tawa.Pour batter in a circular motion and smear some oil around it.

Now flip the dosa and cook for few seconds.

when done remove it.

If you want thick dosa add little water or if you want thin dosai add more water.

Serve hot with chutney.All my family members like this dosai very much you too try and let me know.

Can prepare this dosai even without adding soy flour.
