KERALA STYLE CHICKPEAS CURRY

I have already shared with you Channa curry for bhatura. This is a side dish for poori,roti,chappathi and this is different. Just like other receipes in Kerala we add Coconut for this recipe.

Ingredients

Chickpeas……..1 cup

Onions…..2

Tomatoes….2

Pepper powder….1/2 tsp

Coconut scrapings… ..1/2 cup for a extracting milk.

Ginger garlic paste….1 tsp

Cornflour…2 tsp

Lemon juice…1 lemon

Coriander leaves.

Coconut scrapings…..1 tbs(optional)

Garam masala powder….1 tsp or vegetable masala

Turmeric powder ….1/2 tsp

Cook chickpeas till it becomes soft.

Method

In a kadai .put oil in it. add 1 piece cinnamon. (Optional)

Now add onion fry a little and then add tomatoes

Now add pepper powder ginger garlic paste,garam masala or vegetable masala saute it after adding salt.

Add channa dhal then add coconut milk and corn flour mixed in water and allow. It to boil. Check for salt.

Cook and when done add lime juice and chopped coriander leaves.

PANEER BHURJI

Paneer is fresh cheese common in India. Paneer bhurji is a delicious North Indian side dish.

Bhurji means scrambled so in this dish paneer is scrambled or crumbled.It is a quick recipe and can have withbread,roti or paratha.

Ingredients

Paneer….. 200 to 250 gms

Oil….3 tbs

Cumin seeds….1/2 tsp

Onion finely chopped….1/2 cup

Green chilles…..2 nos chopped

Tomatoes….1 cup

Turmeric powder….1/2 tsp

Chilli powder…. ..1/2 tsp

Coriander powder…. 1/2 tsp

Garm masala or vegetable masala….1/2tsp

Salt as required

Coriander leaves chopped …..2 tbs

Method

In a kadai put oil and then add cumin seeds then chopped onion

Now add green chillies and tomatoes to it.

Now add turmeric powder,chilli powder, vegetable masala and salt to it.And fry it.

Allow it to cook for few minutes only. Otherwise it will become hard.

When tomatoes turns mushy and the spice powders blend well add crumbled paneer to it.

Finally add chopped Coriander leaves

Serve with paratha or roti or rice of your choice.

KARAPOONDI RAITHA

There are different types of raitha. This poondi raitha goes well with both rice varieties as well as poori,roti and chappathi.Very easy to prepare.This is a North Indian raitha. Thisis prepared from crisp fried gram flour balls.Plain boondi is used for sweet like laddu this is salted ones.

Ingredients:

  • Salted boondi…….1/2 cup
  • Curd…..1 cup
  • Salt as required
  • Red chilli powder….1/4 tsp
  • Cumin powder……1/2 tsp
  • Chopped coriander leaves

Method:

  • Keep water on stove and when it is warm switch off the stove.
  • Soak boondi in warm water for 10 to 15 mts.
  • Then press the boondi to squeeze out water but do not mash it.
  • Whisk curd.
  • Add salt
  • Add cumin seeds powder and red chilli powder to curd.
  • Finally add whisked curd and chopped coriander leaves.
  • Option:Can add chat masala too.

VEGETABLE SALNA

Salna as it is pronounced is a side dish for parotta, chappathi,roti and even dosa.Parota is served with spicy and tangy Salna.

Masala to grind:

  • Cinnamon…2 ” piece 2
  • Cloves… 4
  • Saunf….2 TSP
  • Cardomom….3 nos
  • Jeera……1 TSP
  • Onion….2
  • Tomato…2
  • Ginger…1 ” a piece
  • Garlic few pods.
  • Coconut scrapings…1/3 cup
  • Oil…..2 tsp

  • Redchillies powder….1 TSP
  • Coriander powder….2 TSP
  • Fry all the ingredients first the dry spice then onion,tomato,garlic,ginger then add chilly powder and coriander powder.
  • Finally add coconut scrapings
  • When cool grind it into a fine paste.

Ingredients for curry

  • Oil..2 TBS
  • Bay leaves..2
  • Cinnamon….. 2″1 piece
  • Saunf……1 TSP
  • Green chillies…3
  • Tomato….1
  • Onion….1
  • Carrot,peas,potato……2 cup
  • Salt as required
  • Coriander leaves

In a pressure add 2 TBS add bay leaf, cinnamon and saunf.

Now add chopped onion, tomato and chillies

Now add chopped vegetables to it

Now add the grinded paste and salt

Add required amount of water cover and keep for 2 whistles.

Finally add chopped coriander leaves.
