CORN SUNDAL

There are many varieties of sundal.

Today thought of sharing corn sundal.

Ingredients

Corn …….1 cup

Green chilli….1

Mustard …..1/2 TSP
Urad dhal…1 TSP

Oil……1 TBS
Curry leaves few

Coriander leaves … chopped

Lemon juice as required

Salt as required.

Method.

1. Boil corn in a press u’re cooker with salt.

2.Remove corn kernels.

3.In a pan add 2 TBS oil.

4. Add mustard seeds and then urad dhal.

5.Now add curry leaves and chopped coriander leaves. Mix well.

6. Add required amount of lime juice after switching off the stove..

THAYIR VADA

A recipe using curd and dhal vada. It is common in south Indian restaurant . I have already given the recipe for uzhundu vadai.https://anindianhomemaker.wordpress.com/2020/04/18/uzhundu-vadaurad-dhal-vada-2/The above is the link.
Now the recipe for thayir vada. Soak the vadas in warm water for15 to 20 minutes .Then press the vada between your palms to remove water.After removing water keep aside

.INGREDIENTS:

  • Curd……2 cups
  • Carrot grated few tablespoon
  • Coriander chopped few tablespoon.

For grinding:

  • Coconut scrapings…..1/4 cup
  • Green chilly……1
  • Water

Grind all these ingredients into a paste.Whisk the curd a little and add the grounded paste to it.Add salt as per your taste.

Now arrange the vada in a platter.

Add the prepared curd over the vada.Vadas should soak for mini 1/2 an hour to 3 to 4 hrs .Cover it and refrigerate.Finally garnish with grated carrot and chopped coriander leaves.

Serve vadai with little curd. I haven’t added any seasoning in but can add seasoning to the beaten curd.

RED BEANS SUNDAL/KARAMANI SUNDAL/REDLOBIA SUNDAL

A very protein rich diet recipe .Lobia ranks much higher on nutrition making it a hidden healthy gem. They are brimming with the goodness of B complex vitamins,proteins,zinc,calcium and iron.

It contains almost essential vitamins and minerals.Vit.A,B,B1,B2,B5,B6,C,folic acid, potassium, magnesium,selinium,sodium etc.

It is beneficial for our health .It maintains standard cholesterol level. It also removes free radicals.

Lignin is a good component is present is good for weight loss.

Ingredients:

  • Karamani……..1 cup
  • Mustard seeds…1/2tsp
  • Urad dhal…….1 tsp
  • Asafoetida…..1/4 tsp
  • Oil……1tbs
  • Curry leaves…few
  • Salt as needed
  • Red chillies or green chillies…..2
  • Coconut optional…..4 or 5 tbs
  • Coriander leaves optional finely chopped…1/2 tsp

Method.

  1. Dry roast the beans for few minutes and soak it for few hours.
  2. Pressure cook it till it gets cooked.
  3. In a kadai put oil in it.
  4. Add mustard seeds when it splutters add urad dhal now add green or red chillies.
  5. Add curry leaves.
  6. Add cooked beans and salt mix well.
  7. If going to add coconut you can add now .
  8. Same with coriander leaves too

If for neivedyam add coconut scrapings if taking for weight loss diet can skip that.

BULLET SHOTS/POTATO NUGGETS

An evening snack or can say its an starter.

Ingredients

  • Potato ____200gmsto250gms
  • Ginger garlic paste__3/4 tsp or Garlic can chopped and ginger grated
  • Onion_1 or 2 chopped
  • Bread crumbs___1/4 cup
  • Salt as needed
  • Cheese grated 1 tbs
  • If u want can add  more cheese.

For batter

  • Corn flour__1/4 cup
  • Maida_1/4 cup
  • Salt as needed
  • Water.

Bread crumbs to roll the nuggets.

Oil for frying.

Options

Can add basil or oregano or chilly flakes to the mixture.

Method

1.Mash potatoes after boiling.To it add ginger garlic paste,onions and coriander leaves.if u are adding herbs add now.

2.Now add salt to it .Bread crumbs and cheese also to be added.

3.Mix everything well .Take a small portion of the mixture and  make it into cylindrical shape.

4.Dip in Maida batter role in bread crumbs and fry in oil.

Serve hot with sauce and grated cheese.

UZHUNDU VADA[urad dhal vada]

Ingredients:

  • Urad dhal 1/2 kg
  • Green chillies 6 to 8 according to taste.
  • Chopped onions 2 to 3 tbs.
  • chopped coriander leaves 1 tbs
  • chopped curry leaves 1 tbs
  • salt to taste
  • oil for frying

METHOD

  • Soak urad dhal in water for one hour.Wash and drain.
  • Grind the dhal to a frothy dough.USe as little water as possible with green chillies.
  • Squeeze excess water from the  chopped onions or sometimes it may loosen the dough.
  • Now add chopped coriander leaves, curry leaves,chopped onions and required amount of salt to the dough.
  • Heat the oil.
  • To make vada take one lime size ball of dough flatten it on the palm of the hand or on a piece of plaintain leaf and put a hole in the centre and deep fry.
  • for a variation can reduce the number of chillies and can add chopped ginger or pepper.
  • Serve hot with chutney
