MULTI LEGUMES CURRY

Legumes are rich in protein. This is a healthy receipe.Soak the legumes for 6 hrs.

Ingredients:

  • Channa dhal…..1 cup
  • Broad beans …..1/2 cup
  • Soyabeans…..1/2 cup
  • Green peas….1/2 cup.

You increase or decrease the quantity as per your requirement.

  • Onions chopped…..1/2 cup
  • Tomato chopped……1/2 cup
  • Chilly powder……….1 to 2tsp
  • Ginger garlic paste..1/2to 1tsp
  • Oil….2 tbs
  • Vegetable masala…1 tbs.(optional)
  • Salt as required
  • Coriander leaves chopped 2 tbs

Method:

  1. In a pressure pan add oil.When heated add chopped onions fry a little with a little salt
  2. When onion translucent add chopped tomatoes when it turns mushy add turmeric powder,chilly powder, vegetable masala and balance salt.
  3. Now add the legumes to it.And add required water for it. Allow it for 4 whistles.
  4. When pressure releases add coriander leaves.

Serve with chappathi or roti.

Optional if you don’t have these legumes can combine any two or more legumes of your choice.

CAPSICUM CURRY/CAPSICUM GRAVY/BELL PEPPER CURRY

Bell pepper s green are low in calories and rich in Vit.C and other antioxidants making them an excellent addition to a healthy diet.

Capsicum comes in various colors such as red, yellow ,orange and green.

Greens are the unripe ones.It is a decent source of fiber. It is loaded with Vitamins and minerals.

It is high in Vit. C and minerals which include Vit.K, Vit E Vit A,folate and potassium. Rich in carotenoid s.

Bell peppers have many health benefits including improved eye health and reducing the risk of anemia.

Ingredients

  • Capsicum chopped…3 cups
  • Tomato…………….2 cups
  • Onion ………1 cup.

Spice powder

  • Coriander powder…1tsp
  • Chilli powder….1/2 tsp
  • Turmeric powder…1/4 tsp

To grind

  • Grated coconut……1/3rd cup
  • Ginger… A Small piece
  • Green chillies……2
  • Garlic…….3.
  • For frying
  • Oil
  • Cumin seeds…1 tsp
  • Corianderleaves chopped ….1 Tbs

Method:

  • Heat oil in a kadai and add cumin seeds add onions with little salt and fry.
  • When it is translucent add tomatoes when it be ones mushy add coconut paste and add all spice powders and cook till the raw smell goes .
  • Now add capsicum and cook for few minutes.
  • If needed add little water.
  • When done add chopped coriander leaves.
  • Serve with roti, poori, jeerrice or ghee rice.

RAJMA CURRY/RED KIDNEY BEANS

The kidney bean is a variety of the common bean.It is named for it’s visual resemblance in shape and color to a kidney.They are good source of several vitamins and minerals such as molybdenum, folate,iron, copper,maganese, potassium,vit.K and phosphorus.It is high in protein and fibre.

I would like to share my experience of cooking this curry for the first time.It was some 26 yrs back my husband s friend who came from North India shared this curry for lunch with him and my husband wanted me to try this.My husband’s friend’s wife taught me this.The next day itself I tried this curry. It came out very well.And After she tasted it told me that it tastes good. So started preparing this curry.

Lowers cholesterol and reduces heart disease risk.It controls blood sugar also helps in weight loss too.Best for diabetes patients.

Ingredients:

  • Rajma——-200 gms
  • Turmeric——1tsp
  • Cumin———-1/4tsp
  • Chilly powder—1 to 2tsp
  • Ginger garlic paste—1/2to1tsp
  • Oil——2tbs
  • Onion chopped—1/2 cup
  • 🍅 tomatoes chopped—1/2 cup
  • Coriander powder—-1
  • Masalapowder –1 tbs(optional)
  • Salt as required.

Method:

  1. Wash and soak rajma overnight that is up to 8 to 10hrs.
  2. Keep cooker or pressure pan on stove and pour oil in it.Add onions till it turns brown.Then add chopped tomatoes to it Till it turns mushy.
  3. Now add turmeric powder, cumin powder,chilly powder, coriander powder, ginger garlic paste and mix well.
  4. Add soaked rajma to it.Finally add salt.
  5. Close the cooker after adding required amount of water.Allow it for 5 to 6 whistles some beans may require two more.
  6. When it gets cooled open and add chopped coriander leaves to it.

Another method is to cook rajma separately and then add to the other ingredients after adding tomatoes.Check that the beans are cooked and are soft.

Here you can add onion paste with tomato puree instead of tomatoes.

Can be served with naan,roti, chappathi or plain rice.

Water should be added in equal quantity of rajma beans.

SOYA CHUNKS MANCHURIAN

A side dish recipe from me.My daughter wanted a different side dish for fried rice other than kurma.So we tried this and it came our well.Soya chunks are rich in protein and fibre.An healthy food.

Ingredients:

Soya chunks ______1cup

Onion____________2

Capsicum_________1

Chiili sauce_______2tsp

Soya sauce________3tbs

Cornflour__________2 TBS

Tomato sauce______2tbs

Ginger and garlic finely chopped or paste 1 TSP

Oil for frying
Method

1. Boil water and add soya chunks to it with little salt.Leave for 5 MTS.Then drain the water

2Now mix corn flour,salt,if needed little chilly powder and fry

3In a kadai put 3 TBS. Of oil now add chopped onion ginger garlic or if past can add later on.

4.Saute a little add capsicum and carrot (optional).

5.Now add chilly  sauce,tomato sauce,soya sauce and little water allow it to boil.

Few minutes before switching off the stove add fried chunks to it.If you want to have a thickened gravy add corn flour dissolved in water and add to it.

6.Finally add chopped coriander leaves ànd serve with fried rice.
Side dish for chappathi,fried rice, hi ow to make soya chunks Manchurian.

CHOW CHOW KOOTU/CHAYOTO KOOTU

Another South Indian style kootu to share with you all.This is a best side dish for rice and it goes well with chappathi too.

Ingredients:

chow chow:2 cups chopped

Moong dhal: 1/4 cup

Turmeric Powder:1/4 tsp

curry leaves: a few

Milk: 3 tbs.

For seasoning:

Oil :1tbs

Mustard seeds and urad dhal

For grinding:

Coconut grated 3 to 4 tbs

cumin seeds:1tsp

garlic pods:3t0 4 pods

Redchillies:1 to 2.as desired

Method:

1.Peel the skin of chow chow and cut into small cubes.Keep aside

2.Grind all the ingredients

3.Cook dhal seperately and mash it well

4.Cook chow chow with turmeric powder when done add required salt add the cooked dhal also to it

5.add the grinded mixture to it and blend well.

6.heat oil add mustard seeds,urad and curry leaves fry and add to it.

7.Lastly add milk to it. Its ready for serving with rice or chappathi

This is a very traditional syle of kootu.Goes well with vathal kuzhambu/puli kulambu also for sambar rice.
