BREAD TOAST WITH BROWN SUGAR/BROWN SUGAR BUTTER TOAST

Toast is a form of bread that has been browned by exposure of radiant heat. Toast is commonly eaten with butter or margarine and sweetened toppings. Toast is a common breakfast food.

Ingredients:

  • Butter….50 gms
  • Brown sugar….4 tbs
  • Bread slices….2 nos.

METHOD

  • If butter is hard keep in microwave for 30 secs. Or leave it in room temperature till it is soft.
  • Add 4tbs of brown sugar and mix well.
  • When it becomes good texture like jam apply it on the bread slice.
  • Heat a fry pan.Put the slice which is spread with butter on the tawa and cook on low heat. When it is cooked flip the other side which is also spread with butter.Cook till it is brown.

  • It will be hard out but soft inside.

DIAMOND CUTS

A very easy snack which is tasty.This can be made with either maida or wheat flour. This recipe is with maida.Spicy cuts when made with Maida is light in texture but when wheat is used it is dense.

Ingredients:

  • Maida………..11/2 cup
  • Asafoetida….1/4 TSP
  • Hot oil…..1 TBS
  • Chilli powder…1/4 TSP or chillies 3 or 4 and garlic 4 pods grinded into paste.
  • Salt to taste.
  • Oil for frying.

Method

  1. Mix flour,salt, asafoetida either chilli powder or chilli paste hot oil.
  2. Now add water to the mixture andmake it as a dough.
  3. Divide into 4 balls.
  4. Roll it into chappathi.
  5. With the help of a knife or cutter begin to cut vertically with 1″ apart straight lines and then cross ways. Now we get diamond shape cuts.
  6. Keep aside.
  7. Heat oil in a kadai. When hot add few cuts.
  8. Fry until golden and crispy.
  9. Fry in batches and store air tight containers after draining oil.

Can increase or decrease the chilli powder or number of chillies according to ones taste.

ONION PAKORAS/ONION VADA

Onion pakoras is a deep fried snack. Its a commonly prepared by many. It is a proper snack also some say it as Onion Vada. It is a delicious one the onion should be thinly sliced. If it is thickly sliced then it will not be cooked properly.It is a all time starter too.

 

Ingredients

  • Maida – 1 cup.
  • Gram flout – 1/2 cup.
  • Corn flour – 1-2 tbps.
  • Onion sliced thin – 1/2-3/4 cup.
  • Chilli powder – 1/2 tsps or as desired.
  • Ginger grated – 1/4tsps.
  • Coriander finely chopped and Curry leaves also.
  •  Cooking soda a pinch(optional).
  • Oil for frying.
  • Salt to taste.

 

Method

 

In a vessel first add all the dry ingredients and mix well then add onions coriander leaves curry leaves ginger grated and leave aside for 20-30 mins.then sprinkle water and mix well so that it can be taken in a small ball keep oil in kadai for frying now take a spoonful of this mixture and put it in the oil and fry it.After frying,excessive oil can be absorbed using paper towel.This is will be crispy outside and soft inside.Serve hot with sauce.

Snacks in 70’s

In those days after school before going home we go to the vendor near the gate.He sells like Thean Mittai,Kamar Kattu,Javvu Mittai,Sooda Mittai and other items like Borums[ilanthapalazham],Kodukapuli,Gooseberries soaked in saltwater.These were our childhood snacks. In addition to it,there was an ice-factory opposite to our school. We get Kuchi Ice from there.Even today when we think of it it is mouthwatering.Some were nutrious too,children of today really miss such goodies.Hope in future these kind of items have a comeback for the next generation.
